Put aside is the best Shiraz grown on the Hollick ‘Wilgha’ Vineyard, based on flavour ripeness. Spending eighteen months’ maturing in Oak to add structure and complexity to the wine, it shows the typical spice and white pepper aromas and flavours of a cool climate Shiraz, while also carrying both complexity and balance with vanillin and subtle notes of caramel.
