The Hollick Sparkling Merlot is a twist on Australia’s unique sparkling red wine category. Utilising this classic grape from its Coonawarra vineyards in an unconventional way brings to light intense fruit flavours and a soft structure. Matured in two-year-old French and American oak for eighteen months, the resulting wine is liqueured to a predetermined sweetness upon final packaging.
