Botrytis wines are made by Hollick Wines in extremely small quantities, and only in vintage years when the 'Noble Rot' or Botrytis Cinerea appears naturally in the Hollick vineyards.
The Hollick 'The Nectar' wines are rich and sweet, with dried apricot and honey overtones from the Botrytis infection, balanced with concentrated fruit characters and a clean acid finish.
The Hollick Nectar should be served chilled with desserts and cheese, or as an apertif with game pate or terrine.
Whilst drinking sensationally now, cellaring for 7 years or more will be rewarded.

'Lemon meringue pie, honeyed apricots, cumquat and lime. It's both sweet and racy and as good as the show is, the finale is the best bit. 375ml.' - 93 points
